Indian Soup


2 T Butter
1 onion, chopped
3 chicken breasts, diced in small pieces

Saute together until chicken and onion are cooked.
Place in bottom of crock pot.

Add:

2 cans of chicken broth
1 can coconut milk
1 can diced tomatoes w/juice
1/2 c brown rice
1/2 pkg of frozen peas
1/2 pkg of frozen cauliflower
1 T curry pwd
1 t garlic pwd
1T Masala paste

salt and pepper to taste

Mix well, cook on high for 3-4 hrs.
Serve with hot nan.

I have made it several times, and yes we think it is very yummy.

You can buy premade nan at the indian grocery store. Similar concept to Pilsbury biscuits, you open the pkg heat on both sides and then serve.
